Not a tripe fan either, but liver & kidneys yes please. I don’t know why I’ve never considered oxtail to be offal, but I guess it is. It’s one of my favourites.
Like Claire, oxtail is a favourite in my birthday family, but my husband only has his as soup. I love sucking on the bones and nibbling around the cartilage.
A fantastic read Debbie, we should all be eating more offal and actually it’s very delicious. Which abattoir are you currently using? Newmans use to have a pet food business on the side (Ockwells meat) and if we didn’t ask for our offal back it disappeared. After Matt having a very stroppy meeting with the owner after receiving sheep offal instead of pig when we asked the issue was quickly resolved and we always got our offal back. But I do know this is a common issue ,as you have highlighted, in many abattoirs.
Good piece. I hope it persuades some people to try some offal. I was in Waitrose yesterday and some of the meat was £60 kilo - but you get all the protein and taste for a 10th of that money if you buy what other people ignore. I always tried to get offal back when I collected our meat from the abattoir, but often I couldn't. Years ago I used to get lights for the dog, but eventually I was banned from cooking it in the kitchen!

Ox tail and ox tongue... yummy, better than the bits in-between.! Mum had 14 to feed every day at the table so knew how to cook the cheapest cuts.
